01 / ABOUT THE PLACE

About this place

Moving from minimalist sashimi to nigiri calibrated for temperature and knife technique, Sushi Tetsuya sits in a quiet corner of Ikebukuro, offering an experience attuned to the delicate harmony between vinegared rice and each seasonal topping.

The omakase course alternates between briskly served Edomae nigiri and varied seasonal small dishes. Seasonal seafood like bonito sashimi, horse mackerel nigiri, and swordtip squid share the lineup with cooked specialties, such as grilled Spanish mackerel with Manganji peppers or a warming broad bean chawanmushi custard. The nigiri gently yields on the palate, while the accompaniments draw out the natural flavors of the ingredients and pair naturally with drinks.

Alongside beer and wine, a well-chosen selection of sake complements the savory profile of the food. Despite the subdued, serene atmosphere, the welcoming hospitality keeps the tone approachable. With counter seating overlooking the chef at work, quiet private rooms, and standard tables, the space readily accommodates business dining as well as celebratory dinners.
